Chocolate muffins for phase 3
Ingredients for chocolate muffins:
Makes 6 muffins.
- 4 eggs
- 1/2 cup coconut milk
- 1/4 tsp salt
- 2 tbsp sifted coconut flour
- 3 tbsp almond meal
- 1 tbsp cocoa powder
- Place all ingredients for your chocolate muffins into a large bowl
- With Blender or whisk, blend together all ingredients until there are no lumps and blended ingredients are slightly bubbly.
- Fill greased muffin cups 2/3 full. Bake at 210° C in a conventional oven or 190 in fan forced for 20 minutes without opening oven door. The muffins will expand while cooking.
They are the nicest when served hot, with cream!
If you would prefer vanilla, leave out the cocoa and put in organic vanilla essence.
Best to start making your muffins with room temp ingredients.
May need a little more cooking, best to always use a skewer to check in the middle to ensure nothing is sticking to it.
